This week I have heard more about layoffs than what I wanted, so I had to find a way to compensate for my stressful thoughts with some comfort food. Today, Friday, end of the week, after all the stress around me, I had to resort to my comfort food king and queen. King spaghetti and Queen Eggs. I mixed them together, it all came out perfectly and in a heavenly way too ( angels did come to my rescue. ) I felt all better after making this recipe and after confirming that it’s not just the best comfort food but also the best alienating agent for me. I have been through lay offs once and some close friends have been through it twice. Other friends are anxious, threatened with the fear of being hit again. Oh.. We live in troubled economic, confusing times!

Recipe

Ingredients: 1 Package of Spaghetti, 1 egg per person, 1 TBSP salt , 1 TBSP canola oil, parmesan cheese.

1. Cook spaghetti per package instructions.

2. Add butter or margarine to a pan on medium heat. When the butter has melted, add an egg and a serving of cooked spaghetti.

3. Mix well and witness magic happening! 🙂

Mashed Potatoes for Two

Every now and then I get the chance to make this mashed potatoes for two. Normally I make it for 8 or 10 people. When my kids get sick (as my 12-year-old did recently) this dish helps their spirits turn around quickly. This also happens to be my youngest’s favorite mashed potato recipe. In his case, this is my awesome way to say “kudos”, happy birthday, etc.

Store bought deli mashed potatoes make me angry. I wonder why they do not make something yummy from one of the most basic, natural ingredients: Potatoes. I get over my anger by elevating mashed potatoes at home every time. Why not? It is so simple. In the process, I spoil myself and my family. Here is how..

Recipe 

  • Ingredients: 1 potato per person, 1/2 cup of milk, 1 TBSP butter, 1/4 cup grated Parmesan cheese, 1/4 grated mozzarella cheese, 1 TBSP whipped cream cheese
  • Directions

1. Peel and cut the potatoes in rounds

2. When ready, add them to the baking dish where you will be serving the mashed potatoes. Add butter, whipped cream cheese, milk and salt. Mash.

mashedPotatoes43. Spread the mix evenly on the container and add Parmesan cheese, shredded Mozzarella cheese and pieces of butter around every corner of the mix. The butter pieces will help create the beautiful crust you saw in the first image of this blog post. 🙂

4. Bake in a 325 F degree oven for 20 minutes. The following pics will show the transformation during the baking process…

Note: When 20 minutes are done, set the oven to “Broil” and leave on for 3-5 minutes (depending on your oven.)

Chicken Noodle Soup

I couldn’t help it; I had to make chicken noodle soup while US weather news reporters spoke of record-breaking low temperatures for 50 states.. Wind chill, historic freeze, 1-2 feet snow accumulations, and more.

My recipe is quite simple but it has a twist, which adds another level of flavor complexity to this comfort food favorite. Besides the traditional ingredients, I add cilantro, sweet peppers, potatoes and a kick at the end: Red pepper flakes and Parmesan cheese.

Recipe:

Ingredients: Carrots, green onions, sweet peppers, celery, cilantro, chicken breast, noodles, 1 potato (cut in thick slices), salt, pepper and cumin.

Directions: Add a chicken breast to a pot of water ( 4 or 5 cups); Season with 1 TSP salt, 1/2 TSP pepper and 1 tsp cumin. Add diced celery (1/4 cup), green onions (1/4 cup), 1/4 bunch of cilantro (chopped) and potato. Once it boils, let it simmer for 20 minutes. Add 1/2 (or 1) cup noodles at the last 10 minutes. Add a sprinkle of red pepper flakes and Parmesan cheese at the end.
