Pumpkin Seeds at Home

After Halloween we’re left with pumpkins of all sizes here and there. Here’s a simple pumpkin seed recipe. Everyone at home loves this pumpkin seeds recipe.

Ingredients:

– Pumpkin seeds

– 1 tsp of butter

– 1 pinch of salt

Directions:

– Heat up oven at 345 F.

– Take the pumpkin seeds out of a pumpkin. Wash them throughly and place on a round baking pan or big plate where you can spread them out well. Let them air dry for about 4-6 hours or overnight.

Heat the butter until it melts and add the salt. Mix well. Add the seeds to the butter mixture. Cover a baking pan with a baking sheet. Place the seeds on the pan making sure they are well spread appart.

– Bake for 40 to 45 minutes or until seeds are brown.

Potato Bake

This potato bake recipe is now my family’s favorite. It’s great for brunch on Sundays.

Ingredients

1 bag frozen fried potatoes ( store bought)

1 cup of milk

Deli Ham or deli turkey or pre cooked sausage or deli sausage

Mozzarella cheese

Parmesan cheese

Onion ( white or yellow onion, diced)

Sweet peppers

1 Tablespoon butter

Salt and pepper to taste

Directions:

Set oven to 400F degrees. Place the potato fries on a baking dish. Set aside.

Add 1 TBSP butter to a pan at medium heat. When butter has melted add the deli Ham ( or turkey or sausage.) Let it cook until it starts to brown on the edges. Add onions and sweet peppers ( optional ) and continue to saute until all ingredients are mixed in and well cooked. Add the warm cup of milk and mix well. Let the mix continue to cook until the milk starts to simmer. Pour the mix over the potatoes on the baking dish. Top with mozzarella cheese ( lots !!)

Let it bake for 40 minutes. Check the cheese and if it has completely melted you may add some more or parmesan cheese.

“All About Chocolate”, a book and chocolate

My 3rd grader somehow managed to take me into his reading class and into “All About Chocolate”, the book. The task: Complete the book review and bring a chocolate treat to share. 🙂

Last week was my busiest week, but somehow my kid kept reminding me to make sure we had something with chocolate for his class. He already knew he wanted to bring chocolate strawberries. We went to the store and got a very simple couple of ingredients: Strawberries and melting chocolate. Probably everyone knows this recipe already. However, I was amazed at how little time this recipe took as I was able to put it all together in 5 minutes. Our goal was to have 14 strawberries ready to go by 7:55am, and we did it! When it was all done, three thoughts occupied my mind…

  • 1) I should NOT panic when it comes to being a part of my kids’ school activities. (Somehow there is also time to have some fun together!)
  • 2) How expensive valentine chocolate strawberries are!
  • 3) When it comes to putting together a nice and quick chocolate recipe, I should listen to my kids more often.

Recipe

  • Ingredients: Chocolate, hard chocolate to microwave (store-bought, of course)
  • Instructions: Clean the strawberries. The leaves may be handy for hand-picking. Dry them with a paper towel. Follow the hard chocolate directions for melting the chocolate. When melted, immerse the strawberries half way through into the container of chocolate dip.

Generous Brownies!

This brownie recipe has been with me since I was 12. Nadia, my childhood friend, and her mom shared this recipe with me. As I grew older, I kept making these delicious brownies every time I had the chance. It became a favorite at home. Time has passed and my daughter will be turning 12 in the Spring. Wow! So why not pass the recipe to my daughter? [I thought.] We made it together for this post, and she was thrilled! 🙂

A precious gift and memory from my friend Nadia is now a beautiful long-lasting memory and tradition for my daughter.

Recipe

Ingredients: 2.5 butter sticks, 5 TBSP Cocoa powder, 2.5 cups of sugar, 4 eggs, 1.5 cups flour (sifted), 1 tsp baking powder, 1 tsp salt, 1 tsp vanilla. Nuts (optional.)

Tip: All ingredients get mixed and start cooking on the stove top at very low heat. Once they are all well combined you transfer them to the baking sheet and to the oven.

1. Melt the butter at very low temperature on a pot.

5. Add the flour and baking soda, and continue to mix

8. Optional: Add nuts. My family is divided, some like it with nuts and others don’t. So I add nuts to half of the pan. 🙂

In case of emergency… Kids White Pizza! :)

My youngest kid was feeling a bit sick earlier this week. To make him feel better I promised to make home-made pizza (his favorite!) Sadly, I spoke too soon. I only had a few (2 or 3) cherry tomatoes and no tomato paste. 😦  What could I do? White Pizza! My kids had never had white pizza and honestly, I had never made it at home. The challenge was there, right in front of me. After much encouragement and 10 online recipes later, I decided to come up with “my recipe.” By the time I was ready, the white pizza idea had become very specific… No vegetables. No greens. Just a simple white pizza. No more. No less.

So here it is.. A simple, white pizza. Perfect for those emergency moments!

Note: There is no pizza dough recipe in this post. With a sick kid at home, ‘thank  heaven’ for store-bought pizza dough! 🙂

Recipe

Ingredients: Pizza dough (store-bought) – 1 per pizza, mozzarella cheese slices (enough to cover the pizza surface), a generous drizzle of olive oil, salt and pepper to taste. Oregano (Optional.)

Directions:

Follow the store-bought pizza dough instructions for baking. Once the dough is on the pan, drizzle the olive oil on top of the dough. Place the cheese slices all over the pizza dough making sure the surface is covered. Sprinkle olive oil, salt and pepper. Add oregano (optional.)

Bake according to store-bought pizza dough instructions and enjoy! 😉

I added a quinoa salad to go with my serving. It was spectacular! I had to thank my kids for the great white pizza menu idea.. 🙂
