The Perfect Landing is a charming little formal restaurant that sits on top of the Centennial airport in Denver, Colorado. It offers traditional formal dining recipes such as risotto, Wellington beef and lobster thermidor. We had to order all of them, just because we no longer find many places that offer those dishes often. We enjoyed the experience, it was fantastic! I should also say that their service is outstanding! The hostess, the waiter and kitchen staff were absolutely impeccable.

We learned that it started as a catering service for the pilots only. Due to the success with their recipes and service, we are lucky it became a full service restaurant. It’s always been owned by a father and son, which shows the commitment to service and excellence.

Now I bring you a revisit. Rosario remodeled the restaurant and together with Raul, her co-owner they have revamped the already delicious recipes.

My easy version of Posole

This is my version of Posole. Maybe you’ve tried authentic Mexican posole before… Well, this isn’t! I always try to make my version of the recipes I love and that is what I did once again here. Why? Well, the first reason is my kids have a hard time with chile in soups (as it continues to release spicy flavor and it can be too much for them.) In this version of Posole, I am training their taste buds by  making it without the chile but adding pepper flakes when serving. Second reason is I can’t eat pork, so I make it with chicken and give it an extra punch of flavor from other herbs and seasoning (not needed when making it with pork, as pork releases a lot of flavor by itself.) Last, I love to experiment with flavors and luckily for my family it all turns out delicious!

Here is my [easy] version of Posole in 4 steps:

1. Start by placing 2 cups of posole corn in 6 cups of water with salt to boil for 1 hour and a half. Add the chicken breast to the boiling water. (1 chicken breast is enough for 3 people.)

2. Add 1 TBSP salt, TBSP pepper, 1 TBSP cumin, 1 TBSP paprika, 1 cup of chicken stock, 1 TBSP oregano, 1 TBSP tarragon, 1 TBSP parsley and 1 clove of garlic (optional.)

3. Add 1/2 white or yellow onion cut in chunks, carrots and sweet peppers.

4. Let it boil until the posole corn is tender.

Serve adding red pepper flakes and cabbage on top.

Smokin’ Moe’s – Best BBQ in Winter Park, CO

Juicy Chicken Barbecue. It’s a delicious smoked BBQ half chicken which they smoke and then finish on the grill.

We ordered their smoked BBQ half chicken which they smoke and then finish on the grill.

 

Yep! Best Bar-B-Que I’ve had. The place is great with a relaxed atmosphere and fun decor. I will share some of the pictures of the funny, smart remarks all around the place. First, a bit about how we found this gem. We were driving back from Estes Park, CO so by the time we hit Winter Park we were starving! We stopped at the welcome center and they recommended a few places, among which was Smokin’ Moe’s. BBQ sounded great and there we went!

Besides the BBQ chicken, we also ordered HICKORY SMOKED BBQ BRISKET, tender slices of beef brisket, smoked for half a day!

The Colorado Elk Burger had the same fate as the beef brisket, I couldn’t get to it before everyone started to take big bites out of it. 🙂

It was so delicious and so much fun! Great family place, outstanding customer service and excellent food too. We are so glad we stopped at Smokin’ Moe’s, we had a great dining experience! 🙂

 

 

Cumbres and Toltec Scenic Train Ride – Southwest Dining – 4 of 4

I had to let you in on this gem of the Southwest of Colorado, the Cumbres and Toltec Scenic Train Ride. First, it took me a while to get back to my blog. I had been busy getting settled into work and life overall.

This train ride takes you through breathtaking views. There is a stop at a western style cafeteria place that was great! We had many choices for our meal and dessert. This concludes my Southwestern Dining posts.
