
Here is this easy Recipe! Every year we make a ton of food for the holidays . This year we ended up with a lot of baked ham. I typically add ham to my eggs but this time I spiced it up a bit! So here is my Mexican Breakfast Tacos with leftover Holiday Ham!
Ingredients: 1 Tbsp of Olive oil or butter , Left over ham, jalapeños, sweet peppers, onion, tomatoes and eggs. Pinch of Salt.
Heat a pan and add olive oil or butter. Grill diced onions, diced jalapeños and the left over ham in cubes until they start to brown. Immediately add the tomatoes and sweet peppers. Finally add the eggs ( beat the eggs before adding them. Add 1 egg per person.
Mix every now and then until eggs are done and serve/enjoy with warm flour or corn tortillas. Add your favorite salsa if you like them EXTRA spicy! However, I’d try them first since the jalapeños release quite a bit of heat and they’re super delicious just like that but if you really like it súper hot then go for it!
